The base is filled with assorted nuts, gluten free oats, freshly picked herbs, flaxseed – all combined together with olive oil and water. Once the case is complete the filling begins…. sweet potato, onions, garlic, carefully sautéed with aromatic herbs of rosemary, thyme and parsley, combined with cannellini beans, fresh leaf spinach, garnished with juicy cherry tomatoes. This pie is divine either reheated gently in the oven or served cold with wonderful handmade pickles and chutneys – the choice is yours.
